I've been gathering all my wfp bits and pieces together and today I had it all set up minus the pole which is ordered.

I turned it all on and it's great but then I turned off the small tap at the end of my hose.

The pump still keeps pumping the water but there's no where for it to go.

Will this damage the pump. What happens when your on a job and stop to talk for a customer and you want to turn off the water flow with the hose tap.

When I turned it on again the water blasted out with a lot of pressure?

 
If you dont have a controller then make sure your pressure switch is wired in, as it should cut the pump out (albeit at the top psi your pump can handle, which would account for the pressure release when you open your tap)

If you have a controller, re calibrate it.

Calibrating basically sets a pressure in your hose, so means that when you shut your tap off and the controller detects the pressure you have preset, it will shut the pump off. It will then make the pump pulse so it can detect when you have opened the tap again.
