Anyone know why a heavy duty pump is wired this way ?

Goes from feed to bottom of pump then to top[emoji848]

As the pump is shown in your photo the bit at the top with the two red wires is the pressure switch. If it didn't have a pressure switch there would just be a red and black wire at the other end of the pump.@spruce could probably give a much more detailed explanation.

Is this the pressure switch that works with the control unit when you disconnect the pole the water stops ?

Yes when the pole is disconnected from the hose the pressure builds up and activates the pressure switch which shuts the pump off.
