I've got 2 brand new leisure batteries and wanting to join together. Has anybody else done this.

When it comes to charging, do I put the positive connector on one battery and the negative on the other battery.

In an ideal world connect -ve to -ve and +ve to +ve on each battery. Then to charge connect the charger to the +ve of one battery and the -ve to the other. Same with your pumps reels etc. That way you spread the load equally between the batteries. If you just connect the charger and pumps, reels onto one battery you will be putting more strain on that battery as the linking cables have a small resistance.

As per @ched999uk

The other thing is that the second battery should be the exact same amp hour rating and the same age as the original.

If not, the newer battery will discharge in the older battery and both will end up flat.
